Ethiopia, the ancestral home of coffee, holds a special place in our hearts at Haiku Brew Coffee. The wild coffee forests of Ethiopia's Kaffa region still harbor thousands of undiscovered coffee varieties, making it one of the most genetically diverse coffee origins in the world. Our Ethiopian offerings showcase the incredible complexity and diversity that only this ancient coffee-growing region can provide.
Ethiopian coffees, particularly those from the renowned Yirgacheffe region, are celebrated for their distinctive floral and citrus notes. Our naturally processed Ethiopian Yirgacheffe reveals intense jasmine aromatics, bright bergamot notes, and a delicate blueberry sweetness that exemplifies the best of Ethiopian coffee processing traditions. The high elevation growing conditions (1,800-2,200 meters above sea level) contribute to the slow development of complex sugars in the coffee cherries, resulting in wonderfully nuanced cup profiles.
The Ethiopian coffee industry remains largely composed of smallholder farmers, with many growing coffee in their home gardens or small plots using traditional organic methods. We work with washing stations that serve these communities, ensuring fair compensation for their exceptional harvests. Our current Ethiopian offerings include both washed and natural processed lots, allowing you to experience how processing methods interact with Ethiopia's unique terroir. Look for notes of honeysuckle, Earl Grey tea, and stone fruit in our washed Ethiopian selections, while our natural processed lots offer more pronounced berry and wine-like characteristics.
