Colombia's unique geography creates an extraordinary range of microclimates ideal for coffee cultivation. At Haiku Brew Coffee, we carefully select beans from different Colombian regions to showcase the country's impressive diversity. From the soaring peaks of the Andes to the lush valleys below, Colombian coffee represents some of the finest examples of South American coffee production.

The Huila region, one of our favorite sourcing areas, produces coffees with remarkable balance and complexity. Our Huila offerings typically feature bright apple acidity, caramel sweetness, and a silky body that makes them perfect for both espresso and filter brewing. The volcanic soils and high altitude (1,600-2,000 meters) of this region contribute to the development of distinct flavor characteristics that set these coffees apart.

Coffee farming in Colombia is predominantly a family affair, with most farms being smaller than 5 hectares. We partner with cooperatives that support these smallholder farmers, providing them with technical assistance and ensuring premium prices for quality harvests. Colombian coffee benefits from a unique climate that allows for year-round harvesting in different regions, though we particularly prize the main harvest periods that produce our favorite lots. The careful selection and separation of ripe cherries, combined with meticulous processing at local washing stations, results in the clean, sweet profile that Colombian coffee is famous for.
